Hello and welcome to Romance Recipes! Every Thursday I will introduce you to a new author and a new recipe! Two of my favorite things! This week I am bringing you author, Toni Kelly, and her recipe for Flan along with an introduction to her book, Irish Dreams. (In spirit of Cinco de Mayo even though book is about an Irishman)
- 1 cup and 1/2 cup sugar
- 8 large egg yolks, 3 large eggs
- 1 14oz can sweetened condensed milk
- 2 13 oz cans evaporated milk
- 1 teaspoon vanilla
- 1 tsp orange rind
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
Preheat oven to 325 degrees. You will need 1-2 8 inch specialty flan cookware and a large baking pan to put them in.
Pour 1 cup sugar in warm pan over medium heat. Constantly stir sugar until it browns and becomes caramel. Quickly pour caramel into cookware.
In a mixer or with a whisk, blend the eggs together. Mix in the milks then slowly mix in the 1/2 cup of sugar, then the vanilla, spices and orange rind. Blend smooth after each ingredient is added.
Pour custard into cookware. Place cookware in/on a large glass or ceramic baking dish and fill with about 1-2 inches of hot water. Bake for 45 to 1 hour and 15 minutes in the water bath and check with a knife just to the side of the center. If knife comes out clean, it’s ready.
Remove and let cool. Let cool in refrigerator for 2 hours. Invert cookware and the caramel sauce will flow over the custard.
“What?” Maggie met Elsie’s gaze. “You’re leaving?”
“Definitely not.” He raised his hands in surrender as his mouth curved upward. “I will behave like the utmost gentleman.”
“All right.” Turning, Elsie followed her fiance, leaving Maggie standing alone with Ethan.
“Married gentlemen don’t kiss or ask for kisses, especially with unknown women,” she said.
Ethan frowned and adjusted his cuffs. “You’re right.”
With one look at his contrite expression, sadness and a hollowed out feeling filled her. How could one man affect her this easily? After Rick, how could she ask such a silly question? It appeared learning from mistakes was beyond her capabilities.
“I’m sorry if I offended you.”
“No worries. After what you did yesterday, I owe you.”
“How about a dance?” Hand held out, he nodded toward the floor below. “Friends. Completely platonic dancing.”
Absolutely nothing with this man could be completely platonic.
She quickly quashed the thought and slipped her hand in his.

Toni Kelly first discovered a passion for writing at the tender age of six when her mother would “publish” her scribbled tales using trusty old word perfect. Gradually, stories of geese and golden eggs became poems and essays until one fateful night nearly a decade later when Toni snuck a romance novel from her mother’s room. The cover’s backdrop was scenic with mountains and a lake but the couple of focus really caught her attention, a beautiful woman with long, wavy red hair and a stunningly handsome male enveloping her in his arms. Needless to say, several nights of reading later, Toni was in love with the characters as well as the romance genre itself.
So, after years of reading thousands of novels—romance as well as other genres—and several attempts to write “stories” for leisure, Toni decided to make a go of her passion and write her first full-length manuscript. She writes principally paranormal and contemporary romance.
When Toni is not writing or thinking up new plot ideas, she loves traveling and experiencing different cultures, languages and traditions. Many times these experiences provide inspiration for her writing. In addition to this, Toni is bilingual in English and Spanish and currently working on teaching herself Italian whenever time permits.
