Getting Just Desserts in New Orleans with Nancy Gideon

One of the best parts of being a writer is the research . . . especially when its hands on.  That means travel.

It’s no accident that I set my “By Moonlight” dark paranormal series in New Orleans, my favorite city.  In the Quarter, the cuisine is an experience unto itself. The Court of the Two Sisters and Antoine’s Hermes Bar for Creole, La Bayou on a Bourbon Street balcony still draped with beads from Mardi Gras for Cajun, fried catfish at Daisy Dukes and gator poppers at Margaritaville (and it WAS 5:00!): New Orleans is all about the food!

After a long day of walking off those calories, shopping along Royal and Decatur, touring the cemeteries and the Garden District, it’s libation and dessert time.  I’m not normally a dessert person, but the way they make them in the Big Easy is an event unto itself. Nothing caps a day like café au lait and beignets drenched with powdered sugar in the plastic chairs at Café du Monde while listening to street musicians on the Square. Except maybe Aunt Sallie’s pralines with pajamas on and sore feet bare.  Or Sazeracs (the official cocktail of New Orleans) and rum-soaked bread pudding at K-Paul’s Louisiana Kitchen. Something about that irresistible sweetness to top off the spicy adventures of the day…ahhhhh.  I can’t wait to go back for another helping!

Banana Bread Pudding

Servings: Makes 10 – 12

  • 1 1/2  – 2 loaves stale French bread, torn into pieces
  • 6 cups whole milk, in all
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 1/4 cup gold rum
  • 2 ripe bananas, mashed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon vanilla extract
  • 2 tablespoons banana flavoring
  • rum sauce

 

Rum Sauce

  • 1 tablespoon cornstarch
  • 2/3 cup cold water
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup rum
  • 3/4 teaspoon vanilla extract
  • 3/4  teaspoon banana flavoring

 

Preheat oven to 350ºF.  Lightly grease a 9 x12-inch deep baking dish and set aside.  Soak bread in 4 cups of milk in a large bowl, pushing bread down into milk occasionally.  In a separate bowl, beat eggs with sugars until sugar is dissolved. Add 1 cup of the milk to lighten mixture. Use the remaining 1 cup of milk as needed to make sure the bread is soaked through. When bread is thoroughly soaked, fold in egg mixture, bananas, spices and flavorings. Pour mixture into baking pan. Bake 45 to 50 minutes, until completely set.

Rum Sauce

Dissolve cornstarch in the water. In a non- reactive saucepan bring sugars, rum, flavorings, and cornstarch mixture to a boil over medium heat. Cook for one minute stirring constantly. Add butter, stirring until incorporated.  Keep sauce warm until ready to serve.

 

For a taste of another simpler but just as sinful favorite:

 

Bananas Foster (4 Servings)

3 ripe bananas

1 stick of butter

½ c brown sugar

½ c dark run

vanilla ice cream

Melt butter in non-stick skillet over medium heat. Add brown sugar and cook 3 minutes, stirring constantly. Cut bananas in half lengthwise then in pieces and add to skillet. Cook for 3 minutes, shaking skillet back and forth. Add rum and carefully ignite with fireplace lighter. Cook 30 seconds or until flame dies out.  Serve with a scoop of vanilla ice cream.
