This week I am bringing you author, Kristina Knight, and her recipe for Empanadas along with an introduction to her upcoming release, What a Texas Girl Wants. Kristina Knight ~ Empanadas, a Girl’s Weakness!
I love good food – I think we all do. Is anything worse that being so hungry you can taste the imaginary herbs and spices in a favorite dish…only to learn you’ve been served a plain, cold, cheese sandwich? Nope. At least not for me. Which is why food is always way over the top in my books – because even in my culinary skills leave a little to be desired and I call out for pizza a little more often than I should, my characters can eat like they’re royalty!
One thing I am good at cooking is dessert, which is where my recipe for dessert empanadas – a dish I share a little about in my book What a Texas Girl Wants. At dinner one night, Kathleen and Jackson are treated to a favorite family dish – Guillermo’s Empanadas. This is a recipe I actually concocted all on my own, by taking traditional empanadas – which are usually filled with chorizo or chicken, peppers and veggies – and desserting them up!I promise, you can’t eat just one – so make these when plenty of people are around! P.S. have a napkin handy…you’ll need it!
What you need:
20 small empanada circles, made from sweet pastry dough
10 ounces goat cheese, plain (cream cheese works in a pinch)
½ cup sugar
1 teaspoon vanilla
1 tablespoon orange zest
½ cup sliced almonds
1 egg yolk, separated; lightly whisk the white
¼ cup powdered or confectioner’s sugar
Putting it Together:
The goat cheese should be at room temperature. In a medium bowl mix the goat cheese, orange zest, sugar and vanilla. Place the empanada shells about one inch apart on a cookie sheet and then spoon the cheese mixture into the center of each shell. Center 2-3 raspberries and some almond slices in each and then fold the shell over to seal it. Brush the egg whites over each shell and then press the edges together with a fork. Put a couple more almond slices on top and lightly sprinkle a bit of sugar over each. Once the empanada’s are created, place them in the refrigerator for at least 30 minutes. Pre-heat the oven to 375 and back for 25 minutes. Serve.
