This week I am bringing you author, Sharon Cullen, and her recipe for Peanut Butter Fudge along with an introduction to her book, Her Dark Knight. Hello, everyone! Cooking is my thing. Well, more specifically, baking. I don’t necessarily like to cook a whole meal but boy do I love my sweets. I discovered this recipe one year at Lori Foster’s Reader and Author Get Together and it quickly became a favorite in my family—especially with my teenage son. It makes a ton so be prepared to divvy some out to friends and neighbors.
Peanut Butter Fudge
½ cup butter
5 cups sugar
12oz can evaporated milk
18oz jar creamy peanut butter (Jif works best)
7oz jar marshmallow cream
Butter sides and bottom of large pan, leaving excess in pan.
Add sugar and evaporated milk, stir well
Bring to a boil over medium heat, stirring occasionally. Cook, stirring constantly until thermometer reaches 234 degrees
Remove from heat, add peanut butter and marshmallow. Beat with wooden spoon just long enough for peanut butter and marshmallow to melt. Pour into a 13X9X2 pan sprayed with cooking spray.
Cool. Makes about 2lbs.
