PATINA DE PIRIS (Pear-and-honey soufflé): The dessert course in ancient Roman was called the mensa secunda, or “second meal.” This ancient pear patina recipe is similar to the modern recipe, the major difference being the modern version lacks garum (a Roman fish sauce used as a flavor enhancer).

Ancient Recipe Version: Grind boiled and cored pears with pepper, cumin, honey, passum (Roman raisin wine), garum, and a bit of oil. Mix in eggs and bake over moderate heat. Serve with a bit of pepper sprinkled over the top.

Modern Pear Patina Recipe Version: (serves 4)
4 pears
water or white wine (to cook the pears)
1 tablespoon honey
pinch each pepper and cumin
1/2 cup passum (Very sweet red wine sauce, made by boiling new wine to thicken it. Perhaps honey was added.)
3 eggs
1 1/2 cups milk (optional)
1 tablespoon olive oil

Poach the whole pears in water or white wine. When they are done, peel and core them, then crush them into a puree, mixing in the honey, pepper, cumin and passum. Beat the eggs, adding the milk if desired. Then blend this into the pear mixture with the olive oil. Pour into a casserole and bake for around 20 minutes at 350° F.

Sunshine lit her husband’s dark brown hair, now almost long enough to start a braid in the Visigoth style. Gigi loved how he looked, loved even more all the little things he did to show how much he cared: making certain she got the first taste of whatever was served; letting her ride his horse for hours as they traveled, and when she walked, placing himself between her and the jumble of wagons for safety’s sake.

Gigi smiled, her will to succeed, to embrace this life, fully restored, and she marveled at how everything had changed since she’d met him. Magnus, I adore you.

Just then, he turned, searching the camp as if sensing her presence and the intensity of her thoughts. His gaze found hers, and he gave her a long look back. Soon, he told her, love lighting his blue eyes. Very soon.
