Today I am bringing you author, Chandra Ryan, and her recipe for Chicken Tacos along with an introduction to her paranormal erotic romance, Ink in the Blood. The heroine in Ink in the Blood, Izzy, is a recovering addict and is trying to live a healthier life. But, of course, she’s still going to want comfort food from time to time. And, in my home, nothing is more comforting than hot, homemade tacos. And with ground chicken and fat free refried beans you can even argue that it’s healthier.
2lbs COOKED ground chicken
2 -5oz cans of fat free refried beans
2-1oz packets of taco seasoning (we use Lawry’s)
About 20 soft or hard taco shells depending on preference
Plain fat free Greek yogurt
In a large skillet on medium heat, combine the cooked chicken and the refried beans. Stir until smooth and well mixed. Add the water amount listed on the back of the back of taco seasoning packs (remembering to double one pack since you’re using two) then stir in the seasoning. Let the mixture simmer until it thickens and is hot.
Scoop a couple of tablespoons of the meat and bean mixture onto a taco shell then garnish with the cheese, lettuce, Pico de Gallo, and a little bit of the Greek yogurt (this will kind of act like sour cream). Serve immediately (I had mine with Spanish rice) and promptly refrigerate any leftovers.
