Today I am bringing you author, Beth Fred, and her recipe for Tiffany’s Tacos along with an introduction to her romance, The Other Marlowe Girl. I was here not too long ago to talk about The Fate of A Marlowe Girl (still free) and Tiffany’s migas went over well. Today, I’m back with The Other Marlowe Girl which is a story of redemption for Kammy the bad girl sister. Since Kammy’s not the kitchen type, we’re making Tiffany’s Tacos.

The most important part of any taco is the tortilla. It probably doesn’t seem like it, since the filling always steals the show. But let’s face it, the tortilla is the base of the taco. If you’re savvy enough to make your own tortillas, go for it. However, Tiffany and I are not. Tiffany’s fortunate enough to have Luke’s abuela’s  tortillas. I rely on a tortillaría. If you have one in your city, this is a good option. If not, you can use packaged grocery store tortillas but try to find a good soft one. If you Skirt Steak Tacoscan’t find one of great quality, warm it in a pan with butter for a few seconds before you use it for the taco.

You can put anything you want in a taco, but today we’re going with steak, because it’s simple and delicious. Stew meat or a chopped skirt steak are good options for this. You want to grill it using either an outdoor grill or an inside grill. You can sprinkle chiplotle or chili powder over the beef to let absorb some flavor while cooking. I sometimes chop a jalapeno or two and throw those bits along with some cilantro on the grill. This gives it a nice flavor. Once you’ve got your meat made, all that’s left to do is spoon it into the center of your tortillas. You’ll want to chop some onion and cilantro and sprinkle a bit of each over the meat of every taco. You can also chop a lime into wedges and serve a wedge or two on every plate. Squeezing fresh lime juice over the meat does a lot to bring out the flavor. And if you remember the salsas we made with the migas, they’d go great with the tacos too.
