Today I am bringing you author, Johannah Bryson, and her recipe for Shelby’s Caramel Cinnamon Sticky Buns along with an introduction to her contemporary romance, Lake Effect. Shelby’s Caramel Cinnamon Sticky Buns
Prep = 40 min
Rise = 2 hrs
Bake = 30 min
Yield = 15
3.5 to 4 cups all-purpose or bread flour
1/3 cup granulated sugar
1 tsp salt
4.5 tsp yeast (2 pkgs)
1 cup warm milk
¼ cup real, unsalted butter
1 large egg
Mix 2 cups of the flour, 1/3 cup sugar, salt and yeast. Add warm milk, ¼ cup butter and egg. Beat with electric mixer on low speed for 1 minute, scraping bowl frequently. Beat on medium for 1 minute, scraping frequently. Stir in enough of the remaining flour to make the dough easy to handle.
Place the dough on a lightly floured surface. Knead about 5 minutes or until dough is smooth and springy. Grease large bowl with butter. Place dough in bowl, turning to cover all sides. Cover loosely and let rise in a warm place until doubled. About an hour and a half. It’s ready if you poke it and the indentation stays.
1 cup packed brown sugar
½ cup butter, softened
¼ cup corn syrup
1 cup pecan halves (walnuts work too)
In a 2-qt saucepan, heat the brown sugar and butter to boiling, stirring constantly. Remove from heat and add the corn syrup. Pour into 2, 8” ungreased cake pans and sprinkle pecans on top.
½ cup chopped pecans or raisins (both are optional)
¼ cup packed brown sugar
1 tsp ground cinnamon
2 Tbsp, softened, unsalted butter
Mix the first 3 ingredients and set aside. Keep butter on the side in a small bowl.
Gently push down the dough to deflate. Flatten with hands or rolling pin into a 15 x 10” rectangle on a lightly floured surface.
Spread w/ the butter and sprinkle with the filling. Roll up tightly from the long side to the other long side. Pinch the edges to seal. Stretch and shape until even.
Using a serrated knife, cut into fifteen 1 inch slices. Place them on top of the caramel pecan mixture in cake pans, placing slightly apart.
Cover and let rise in a warm place for 30 minutes or until dough has doubled.
Heat oven to 350 degrees.
Bake 30 to 35 minutes or until golden brown. Let stand for 2-3 minutes then carefully put a plate on top and flip out the rolls. Take cake pan off right away and allow the caramel to drip over the top and sides. Serve.
