Today I am bringing you author, Melinda Curtis, and her recipe for Low and Slow Chipolte-Maple Beef along with an introduction to her contemporary romance, Valentines Rules. Please join me in welcoming Melinda and savor her recipe for Chipotle-Maple Beef as you read about her new book! 

Valentine Rules, a mini-novella for my Hollywood Rules series, is a contemporary romance that features Gemma Kent who finds herself as a mystery woman with the Twitter handle GlitterfrostGem and as Coach Randy Farrell’s frequent #WomanCrushWednesday. Valentine Rules takes place at Javier’s restaurant, so naturally I must share a Mexican food recipe.  One of my favorites from Rachael Ray is her Low and Slow Chipotle-Maple Beef which you can use to make her Smoky Beef Tacos.  Like the title says, Low and Slow, it takes a while to cook so plan accordingly!

Low and Slow Chipotle-Maple Beef Serves: 12-14 Prep: 15 minutes Slow Cook: 6 hours

Ingredients:

3 chiles plus 3 tbsp. sauce from one can chipotle chiles in adobe sauce

1 cup pineapple juice

½ cup pure maple syrup

3 tbsp. tomato paste 2 tsp. salt

1 tsp. pepper

6 lbs. boneless chuck roast cut in 8 pieces

Directions: 1. In a blender, puree the chiles, adobe sauce, pineapple juice, maple syrup, tomato paste, 2 tsp. salt and 1 tsp. pepper until smooth. Pour the chile mixture into a large slow cooker and add the beef. Turn the beef a few times to coat, then arrange fat side up. Cover and cook on high heat until fork-tender, about 6 hours.

2.  using a knife, scrape the fat off the surface of the beef; transfer the beef to a work surface. Using two forks, shred the beef, discarding any excess fat. In a large bowl, toss the beef with 2 cups of the cooking liquid. Let stand until most of the juices are absorbed, about 10 minutes, then season with salt and pepper.

Smoky Beef Tacos:

Serve the pulled beef with warm corn tortillas and your favorite taco toppings. Enjoy!

Gemma’s stomach did contortions that’d terrify a member of Cirque de Soleil.  College students working as part-time receptionists didn’t land dates with NBA coaches.  Not unless they were beautiful, tall, and well-endowed.  Gemma was plain, petite, and sharp-tongued.

No one would have known about her had Cora not “borrowed” Gemma’s phone and tweeted that first picture of Gemma and Mimi on Gemma’s account, hashtag bestie, hashtag MimiSorbet.

And now Gemma was one of three women meeting Coach Randy Farrell on Valentine’s Day.  He’d choose one of them for a dinner date.  She’d bet her next car payment it wasn’t going to be her.  He’d take one look at Gemma and see she was a phony.  Crush over.  Foolish heart broken.
