Hello and welcome to Romance Recipes where I am happy to introduce you to a new author and a new recipe! Two of my favorite things! Today I am bringing you author, Michele Drier, and her recipe for Cheese Soufflé along with an introduction to her paranormal romance, White Nights, Snap. Since Maxie and Jean-Louis set up housekeeping in Kiev, Maxie’s meals are prepared by the Swiss chef. Jean-Louis and the other Kandeskys (vampires all) get served blood budding, steak tartre, borscht and Bulls blood, so the recipe is for one of Maxie’s favorites, cheese soufflé.
3 egg yolks
4 egg whites
1 cup milk
1.5 oz. butter
¼ cup flour
1 tablespoon heavy (double) cream
freshly ground pepper
1/4 teaspoon freshly ground nutmeg
3 oz. finely grated Emmenthaler cheese
Preheat oven to 425, generously butter a 6 inch porcelain soufflé dish. Separate eggs and sprinkle a dash of salt over the whites. Bring the milk to just a boil in a saucepan.
Make a roux of the butter and flour and stir in the hot milk slowly, stirring to make sure no lumps form. Cook about 5 minutes, until it is the consistency of heavy cream.
Remove from heat and whisk in the egg yolks one at a time, then blend in cream, salt, pepper and nutmeg.
Beat the egg whites until firm, but not too stiff. Whisk about ¼ of the whites into the mixture in the saucepan, and then pour this back into the remaining whites. Fold together with a spatula, adding the cheese a spoonful at a time.
Pour the mixture into the soufflé dish and bake for about 30 minutes. The soufflé should be brown on top and rise about two inches over the top of the dish.
Nik, the third-in-command of the Hungarian Kandesky vampire family, has been handling the family’s interests in Czech munition factories for upwards of four hundred years. He’s been a contented bachelor, throwing himself into business until Jazz strolls into his life. Jazz is Maxie Gwenoch’s successor as the managing editor for SNAP, the international celeb gossip magazine, another Kandesky company. Maxie, Nik, Jazz and Jean-Louis, the Kandesky second-in-command, are headed to Moscow to assess the business potential for a SNAP Russian bureau, until an old enemy shows up. Set against the tensions between Ukraine and Russia, the short Russian nights teach Maxie to cherish her time with Jean-Louis while Jazz faces her own questions about loving a vampire.
Dinner was short. Nik and Jean-Louis had borscht washed down with a bottle of Bulls Blood and Jazz and I had a clear soup, a paprika chicken dish with small dumplings, fresh baby peas and a salad. We shared a bottle of a light Riesling.
We went to the drawing room, had coffee and watched the U.S. and French editions of SNAP. Jazz didn’t have much commentary, Jean-Louis and I made notes and Nik watched Jazz. After the shows were over, Nik asked Jazz if she’d like to walk in the gardens again.
She shivered a bit, said yes, and Nik came to, long enough to ask me if I had a shawl I could loan her. Once wrapped up, she headed out to the terrace, holding onto Nik’s arm. As I watched them, Nik seemed to grow larger, sterner, more in charge. It was an odd reaction for someone who was as powerful as Nik. I threw a questioning look at Jean-Louis who nodded.
Once the French doors closed behind them, I poked Jean-Louis in the ribs. “What was that all about? Nik was looking…I don’t know…different somehow.”
His face got sober. “You don’t understand that? Haven’t you been paying any attention to what I’ve been telling you?”
“You’ve been telling me that Nik’s going to behave like a cave man?”
“Jesus, woman, how is it that you can be in communications and never be able to communicate?’

Michele Drier was born in Santa Cruz and is a fifth generation Californian. She’s lived and worked all over the state, calling both Southern and Northern California home. During her career in journalism—as a reporter and editor at daily newspapers—she won awards for producing investigative series.
SNAP: White Nights the seventh book of her paranormal romance series, The Kandesky Vampire Chronicles, was published March 20. She’s working on the eighth book in the series, SNAP: All That Jazz, scheduled for publication in late spring 2014.
