Today I am bringing you author, Jezebel Jorge, and her recipe for Gluten Free Pizza along with an introduction to her latest release, Fly Away. Jezebel’s Wicked (Gluten Free) Pizza
My latest release, Fly Away, is all about escapism. After being diagnosed with Celiac Disease, I wanted to do just that, because pizza has always been my favorite comfort food. Gluten free frozen pizzas are expensive and not always all that tasty, and believe me, in my quest to find good pizza I have tried them all. So, out of desperation, I started baking my own gluten free pizzas and they have become my signature dish. I think you will find this pizza lighter and more flavorful than any store bought or chain store delivery option.
1 bag of Bob’s Red Mill Gluten Free Pizza Mix (Available at Kroger or Publix)
1 ½ Cup of water
1 Bag of pizza cheese
2 Eggs or one 4 ounce individual serving of egg substitute
Green or Red Pepper
The above can be substituted with any of your favorite pizza toppings.
Fill measuring cup with water and add yeast package that comes with pizza mix
In a large bowl add pizza mix, eggs, olive oil, and according to taste add parsley flakes, black pepper, garlic powder, just a dash of cumin and a squirt of Ranch dressing.
Pour in water and yeast mixture and mix well.
Preheat oven to 425 degrees and place pizza dough on top of stove to sit for 25 minutes.
While waiting fill measuring cup with warm water and thaw package of shrimp.
Chop pepper and onion according to taste.
There will be enough dough for two pizza crusts.
Divide dough into two balls. Second ball can be kept in plastic bag in refrigerator overnight if desired.
Spray pizza pan and flatten out dough to preferred texture.
Keep hands wet to keep dough from sticking.
Bake crust for 10-12 minutes.
Use a fork to cover with Ranch dressing.
Add a light covering of cheese.
Add pepperoni, crumbled bacon, and shrimp.
(Drain shrimp and squeeze out excess water before adding to pizza)
Add peppers and onions or any other toppings.
Cover with cheese.
Bake for 12-15 minutes or until cheese is melted.
Enjoy your pizza.
It goes great with gluten free hard cider such as Angry Orchard or Woodchuck.
